This Random Dozen is Hard!



1. What was the last thing about which you procrastinated?
     It's the thing I always procrastinate about:  cleaning house.
2. How long does it take you to fall asleep, and do you sleep through the night?
    I can usually fall asleep within 15 minutes, unless I'm trying to make myself stay up to watch something on tv.  I usually sleep through the night, unless a noise wakes me up.  I'm a pretty light sleeper, unless I'm really tired.
3. Which decade would you choose to exemplify your favorite fashion styles?
      I have no fashion style...next question.
4. What is your personal best dish to feed a crowd?
    Pan Burritos...it's like a Mexican Lasagna.  Always a hit!
  (I added this after reading Vicky's comment...sorry, didn't even think about adding it earlier!)

  Pan Burritos
2 packages enchilada sauce mix
3 cups water
1 can (12 oz.) tomato paste
1 garlic clove, minced
1/4 tsp. pepper
Salt to taste
2 pounds ground beef
9 large flour tortillas (9 inch)
4 cups shredded cheddar cheese or taco cheese
1 can (16 oz.) refried beans, warmed


In a saucepan, combine the first 6 ingredients, simmer for 15-20 minutes.
In a skillet, bronwn the beef.  Drain, stir in 1/3 of the sauce.  Spread another third on the bottom of a greased 13x9x2 inch bakig pan. PLace 3 tortillas over sauce, tearing to fit bottom of pan.  Spoon half of meat mixture over tortillas, sprinkle with 1 1/2 cups cheese.  Add 3 more tortillas.
Spread refried beans over tortillas; top with remaining meat.  Sprinkle with 1 1/2 cups of cheese.  Layer remaining tortillas; top with the remaining sauce. 
Sprinkle with remaining cheese.  Bake, uncovered, at 350 for 35-49 minutes.  Let stand 10 minutes before cutting.  Serve with taco sauce, sour cream, chili peppers, chopped onion, and/or guacamole if desired.


5. Are you an impulse shopper? What was the last thing you bought on impulse?
    I used to be, but not so much anymore.  I have no idea what the last thing I bought on impulse was.   (okay, husband...I can hear you laughing!)
6. What is one wish you have for your own funeral?
    That Ave Maria be played by a flutist.
7. If it's true that joy is in found in the simple things in life, what does your joy look like today?
    Summer vacation?  Yes, that's it!
8. What is your favorite type of bread?
    Garlic...with lots and lots of butter and lots and lots of garlic.
9. What trait do you fear developing the most? (Laziness, greediness, grumpiness, etc.)
     Hardheartedness.  I hope I never stop feeling  for the children I work with or see on a daily basis.  Or, for that matter, anyone of any age.
10. What trait would you like most to develop?
      Perseverance.   Although I am persistent in many things that I'm sure people wish I weren't, I would love to be able to persevere in some areas.
11. Which room in your house best reflects your personality? Why?
    The kitchen.  At times it's organized, but at times it's a mess.  It's also in the process of being made over.
12. How do you maintain balance in your life regarding, work, family, church, other organizations and activities, and blogging?
  I've learned to say "no" to some things and to not worry about saying "no".

  5. Amen on the summer vacation...and pan burritos sounds great....thanks for sharing the recipe. It made my mouth water...and it is 5 in the morning. I thought the questions were hard this week too....I loved your number 9 answer....it made me cry. As a teacher that would be the worst thing ever. It is scary how much alike we think.

  18. No TV in the bedroom, my husband doesn't like it. So I fall asleep on the couch in my office which is off the bedroom. I don't get to cook with much garlic, it stays with my husband for day :( Recipe sounds awesome, I will have to try it.
